Google Nest does not seem to document it any where, but the battery in the Google Nest Doorbell (Battery) cannot be changed or replaced, as confirmed on this thread:

Sorry to hear you're experiencing this, as I can imagine it has been an inconvenience. I would love to look into this further for you. User @MplsCustomer is correct, you cannot change the battery in your device. You will need to charge your Nest Doorbell (battery) on the regular.
