My doorbell is only able to be physically mounted horizontally, is there going to be an option for rotating video?

Google Nest cameras can be rotated 180 degrees in the Google Home app or the Google Nest app, but this setting is not available for doorbells:

In your case, you're seeking to rotate the image 90 degrees, which other customer also ask for from time to time, but I think it's pretty difficult to do that with a setting, because they'd have to rotate the aspect ratio. Other smart cameras also do not offer a 90 degree rotation capability.
