There could be two things.

If you want to use the cast button, the developer of each app has to code their app for that. There are 10s of thousands of apps that have done this. But not all of them. If you find one that is missing, contact the developer of that app and tell them you want it.

If you are using screen mirroring, that works on most but not all apps. Some apps use tricks that mirroring can't figure out and capture. You can provide feedback to Google so they know that there is a problem.
