I followed the configuration process: Add ->Set up device -> New device -> Matter-enabled device
In my case I have only : Add ->Set up device -> New devices

Hey there Matter,

After you select New devices, try to select the Home structure that you are using and it should be looking for a device afterwards. Tell me if the Google Home app was able to find your Matter-enabled device or not.

I think there is no option to add Matter enabled devices on Google Home for iOS. I have tried it myself. We have to wait for Google to implement this functionality to the iOS app. Or get an android phone to get the Matter device into the system.

Thanks to YSL-mhk-uA2-pwn. I can confirm that iOS devices are not supported when setting up matter devices. Our team is working on it, but we don't have anything else to share right now, but stay tuned for more news and updates.
