Example show below, would like Google to show temperature and humidity or temperature instead of humidity. If you Ask Google what the temperature is, it has that information.

I have the same issue in Android Home application for sensors from linked SmartLife account: it shows only humidity on cards but voice asistant can talk a correct value of temperature from sensor by it name. I cannot find answer anywhere. It is definitly a bug but googlers are ignoring this issue.
