Using Google Nest wifi access points with a Unifi Dream Machine router? Other Nest devices?

I have a Google mesh network set up in a large house. This is Google Nest Wifi 2nd generation. We have Gigabit service coming in at one end of the house. Speed declines as we get farther away from the router. We have ethernet from a switch going to several parts of the house, but when I tried to connect an additional Google Nest wifi router to the ethernet, it would only let me set up other networks so I would have had different zones and am thus just using the additional routers as wifi access points (everything is in bridge mode). So instead we just have one mesh network. I have Lutron light panels set up with Google Home so I can control lighting. I intend to install a Google Nest Hello video doorbell and some Nest cameras.

The IT guy from my office came by and suggested that I install a Ubiquiti routers at each place the ethernet is connected and then have Unifi access points as needed to cover the space. [I think I understood him correctly]. He also thinks I should be using PoE cameras.

If I did installed the Unifi routers, would I be able to use my Google Nest wifi points for a) music; and b) voice commands? Or would I lose that functionality?

According to this reply you can use add-on points as speakers/ assistants only.

Will I be able to connect a Google Nest video doorbell and Google Nest cameras as well? I can return the cameras but and get PoE cameras if I want.

Yes, those should work without Nest Wifi too.
