Google WIFI using ISP router

I am looking at moving ISP's and the router they provide cannot be configured in bridge mode and Google WIFI units (AC1200) don't support the ISP's VLAN number. My question is:

I plan to switch off the WIFI on the ISP router and then hardwire one AC1200 unit to the ISP ethernet ports, and then connect the other AC1200's via WIFI to create the mesh. Will that configuration work?

That is a pretty common way to configure it. You go from the ISP router via ethernet to the main Google Wifi router and then from that one you go to the rest of the Google Wifi APs, either via ethernet or a wifi mesh. You shouldn't have any issues doing that other than if you want to open ports, you would then need to open them on the router of the ISP and the Google Wifi.

If all you need the ISP provided router for is to untag VLAN, you could also consider a managed switch.
