I just setup my google wifi mesh system in my house through Verizon 5g home internet and it is working great. The problem is my security cameras are POE with that has to be hard wired to the router with a CAT 5 cable. Can I hook this into a mesh puck that isn't hooked into my router?

Yep, any wired or wireless secondary Nest Wifi unit with ethernet ports can provide an ethernet connection.
