@maciej Polish language is not supported on the Nest speaker devices and there have not been any announced plans for support or beta access. If it's a language you'd like to see, please leave feedback using your speaker device.

Should I do it from the application?

I created this post because some speakers in PL support the Polish language and I thought it would be possible to turn on a single device

If you have the Home app you can leave feedback there by pressing your profile picture and choosing feedback. Or you can leave feedback with your speaker -- you're not the first to ask for Polish language and I do know assistant on the phone supports it but it isn't on Nest devices.
