When I’m playing music in one of my mini’s and try to stream video in my Google display from my Nest Cam the music stops.

I'm sorry to hear you're experiencing this issue of your music pausing when you stream your Nest Cam. I understand your concern.

This is an issue our team is aware of and currently looking into.

In the meantime, it would be great if you could share feedback from your device using the keywords, "Media pauses on devices when streaming Nest Camera". You can also check this link out for more information on how to do so.
