Unfortunately, Google Nest requires either the QR code or the 6-character Setup Code when installing or re-installing a Google Nest camera or doorbell. If you manage to get your doorbell off, write down the 6-character Setup Code and save it someplace; we've done that with our cameras and doorbells for years.
