In fairness, it's not advertised as having that feature and the help page for how to lock and unlock the models that support that feature clearly lists the supported models of thermostat.

I've never seen a definitive answer as to why Nest Thermostat (2020) doesn't have this particular feature. My assumption is because in my experience supporting here in the community, it causes more problems than it's worth. If your thermostat has Wi-Fi troubles, disconnects from the app, or else you otherwise just can no longer control it with the app, you need to factory reset the thermostat by connecting it to a computer and modifying files on the thermostat, which is a technical and cumbersome process. I've seen it happen a lot of times here in the community, and that's not a great user experience.

I have read this https://support.google.com/googlenest/answer/9247319?hl=en&ref_topic=9361873 but none of the lock options appear on my Google Home App. Is it possible to lock the thermostat to a heating range and stop someone trying to manually change it?

Nest Thermostat (2020) setup in the Google Home app does not have a lock feature unfortunately. You can still set a temperature hold, but this can easily be changed in the app, or on the thermostat itself, there is no lock mechanism.

Thanks. I have to say I’m pretty unimpressed with the fact that the help pages don’t explain this. It’s potentially misleading to consumers. It also raises the question: why degrade and remove features from your products?
