If I connect both my wife’s and my cell phones linked to the thermostat and Eco mode is activated, will it know that one of us is still home and not change the temperature? We’ll both forms need to be away from the home to activate Eco mode?

Yes, as long as you have told the system to use both phones for presence sense, that is how it is supposed to work. At my house it never worked correctly for my wife's phone. We just use the tsat's built-in presence sense to trigger eco mode.
