What is easiest/quickest way to set the temperature on a fixed temp while away for a few days?

"Eco mode" is what you want. (On most thermostats this is called "permanent hold".) In "Settings", choose the fixed temperature for Eco. Then set the Nest to Eco mode on your way out the door. Turn off Eco mode from your phone a few hours before you expect to walk back into the house.
