My thermostat gets very cold every afternoon

Every afternoon my thermostat goes very low to 62 degrees.

I am trying to maintain a 75 degree temperature all day.

The 62 is in the blue color.

What can I do to fix this issue?

What schedule is the Nest set to? if you didn't set a schedule yourself, or at least not on purpose, there may be a schedule anyway. Look in Settings to see and modify it. To tell the Nest to cool to 75 all the time, you can either set a schedule in which every set point is 75, or you can set 75 as your Eco Temperature and then turn Eco mode on. (The latter might not work, if Eco temperatures can't be set as low as 75. I don't know the allowable range.)
