I don’t think it’s a time issue. The main hot water tank has a thermostat and I am thinking that once the hot water falls below a certain temp. The boiler switches on to heat the water. This is despite the nest thermostat having the hot water setting at off

That is how we would expect the thermostat to function if the hot water is scheduled to be on, to activate once the temperature drops below the one set on the tank if it is scheduled to be on and to stop when that temperature is reached even if it is scheduled as on.

Go to the hot water control section in the Nest app and take a screenshot of the hot water schedule so I can see what the expected heating behaviour would be.

The problem I have is that I was trying to control the hot water during the day and night by switching it on only when I needed it. But it’s like the thermostat attached to the hot water tank is over riding what I am asking the nest thermostat to do ie don’t heat the hot water until I tell it . But for example the boiler switches on at night when everyone is sleeping and given the current cost of gas I would rather not have the water heated at that time when I don’t need it

Thanks for the screenshot. It may be possible in this case that the activation could be related to the bacteria prevention feature, if it is enabled.

Let's just see if perhaps that's what's going on. Go to Settings> Equipment> Bacteria prevention and select Disable. Once this is done, give it 1 or 2 days and see if the behaviour comes back and let me know here what the result is.

It is also possible that there is a separate timer or controller in the system that may be influencing the hot water side but let's just check this first to see what the result is.
