I just bought a Nest Doorbell (battery) and the notifications on my iPhone are so quiet I miss them every time. I can't find a way to change them to a custom sound or make them louder. Additionally, the only way to have a chime inside my house is with a smart speaker, which I don't want. So, so far the Nest Doorbell is a big fat bust. Are there any changes coming down the line? I have Google fiber and therefore the home app so it makes sense to use these products, but not if they're terrible.

You cannot set up a custom sound for Google Nest devices, and the volume depends on your phone's volume. The only thing you can configure is the sound for "Default Alerts" under Settings | Sounds & Haptics in your iPhone settings, but that's the default alert sound for ALL applications.
