I currently have the Nest doorbell battery in battery power configuration. If i choose to use the existing wiring for the Nest Doorbell (noting that it is compatible (16VAC), will that mean it will never need to be charged again? What are the pros and cons to converting it?

It depends on your weather. The battery in the battery doorbell won't charge at temperatures below freezing, even if wired: https://support.google.com/googlenest/answer/11830989

Ouch! We're in Minnesota, USA. There's a very long thread (over 600 replies) on cold weather concerns with the battery doorbell; we're glad we bought a third Nest Hello doorbell instead for our third entrance, and wired it with an OhmKat Power Adapter for the Nest Hello.
