If you actually have a 1st gen Google Nest wired Outdoor Camera (your post says "Nest Protect"), they are attached to the mounting bracket via a magnet, so you just pull the camera off of the magnet in the mounting bracket. (We have 3 of these cameras.)
The QR code (and the 6-character alphanumeric setup code) are printed somewhere on the back of the camera, though I've seen some customer posts reporting that the QR code and/or the setup code have faded or weathered away. That's why for years we've written down the setup codes whenever we've installed a new camera.
You cannot reinstall a Google Nest camera without either the QR code or the setup code.

There is nothing to "disconnect". Just pull your camera off of the strong magnet. In the install video on the Help topic below, starting at about 4:47, you can see them placing the camera on the magnet:

Mine is the HARD WIRED version. So no magnet connection.

Sigh. We have three hard-wired 1st gen Google Nest Outdoor Cameras, each attached with a magnet.
Perhaps you have a Google Nest Outdoor IQ Camera. If so, see the video in the Help topic below, starting at about 6:45 for how the camera is mounted and dismounted. You need a 2.5mm or 3/32-inch hex key to dismount it. The QR code is on the bottom of the base, shown at about 1:50 in the video.

You are totoally correct. It is the Outdoor IQ camera. My issue is.....that I cannot loosen the Hex screw. it is totally stuck.

Do you have any WD-40, penetrating oil, or other similar product that you could squirt on and around the screw? You could then let it sit for awhile to see if that helps.

I did try that/ o luck so far

No luck so far with the WD 40 idea.

Sorry. I have no more ideas. Maybe you try some more WD-40 and let it sit overnight. To reinstall, you need either the QR code or the 6-character alphanumeric setup code on the bottom of the base of the camera.
When you do get it unmounted, write down the Setup Code; we've done that with all of our Google Nest cameras and doorbells.

No. The hex screw is still totally stuck.

I have no additional suggestions for removing the stuck screw. If you do a Google search, you can find various solutions for removing a stuck screw, but I don't know which to recommend.

Well I FINALLY got the hex screw loosened but now I cant gget the back plate off completely., or even enough to see the codes. Ay ideas?

At last!!
We don't have an IQ camera, and Google Nest only offers these dismounting instructions:

And it should be possible to unplug the cord from the camera (shown plugged in at 6:46 in this video), unless the previous owners pulled all of the excess cord tight inside the wall:
