We just installed the nest wired doorbell and the Theme options is not even on my menu! Only chime duration and other options.

Google Nest only makes its "themes" available around seasonal holidays. The rest of the year, the option is not even available.

Themes are only available around a holiday if there is an applicable theme to choose from. You can learn more about themes here.

The help page to which you provided a link says: "In addition to standard themes, seasonal doorbell themes are available around some holidays."
That statement is not true; there are no "standard" themes. There are ONLY seasonal themes.

Hi,So I've read the chimes are seasonal, but I've read there are Happy Birthday and Westminster chime as well. Are those seasonal too?

Most likely they are Seasonal chimes. It could be based off of your location, etc but it is most likely just a seasonal option. Just check your settings to see if you can change it.
