How can a Google Nest Cam or Hub Max work as a baby monitor?

Everything I'm reading supports using a Google Nest Cam or the built-in camera on the Google Nest Hub Max as a baby monitor, however it's still unclear to me if there's a decent way to get continuous listening on your phone or another Google speaker for an extended period of time - eg overnight. 

I like the idea of using a Google camera because it can then be useful once I no longer need a baby monitor, but notifications when my child is making noise simply won't be enough for night use - I really need to hear them live. 

Anyone able to clarify whether Google cameras can serve this purpose effectively?

I have seen that these can be used to monitor your children, but this is not it's function. I am afraid what you are asking for, may not become a reality because this is not a baby monitoring device.

Decided to go a different route, the Hub Max was too expensive to take a gamble that it would work how I wanted it to.
