I'm sorry for your loss. As just another Google Nest customer, I should note that there aren't many mechanisms in place for handling online accounts when someone passes away.
Your doorbell is actually registered to your late husband's email account. If you still have access to his email account, you could log into the Google Home app with his account, add yourself as a household member under Settings | Household. (If he had 2-factor authentication enabled, you may not be able to, if the login sends a text to his phone number.) This will send an invitation to your email account (it has to be a Google [gmail] account. Then log off of the Google Home app on your husband's account. Then accept the invitation on your Google account and log into the Google Home app using your email account. Then remove your husband as a household member under Settings | Household. If that does not work, you could log out of the Google Home app, log back on with your husband's account, go back to Settings, scroll down to the bottom, and select "Leave this home".
This should leave you with the only access to the doorbell, under your Google account. If you have the older Google Nest Hello Doorbell, you will still administer it and handle notifications in the Google Nest app. (Google Nest has a 2-app solution.)
