Long story short, my ex-wife and I no longer communicate. I pay for my Nest Aware subscription BUT my ex-wife is listed as the “owner” of all of our devices. I cannot remove her and I don’t want her having access to my cameras, doorbell or display.
How am I able to remove her as the owner and label myself as the owner? I want her completely removed from my account so she has no access anymore.

Sorry to hear that Jacob4ta. There is no way to change the owner, unfortunately. To remove someone from the home, see the "remove other members from a home" steps below:

You would need to remove the devices from the app, factory reset them, and set them up again using your account. For your cameras and doorbell:

Restart or factory reset Nest camera or doorbell - Google Nest Help
Be sure to read the important notes about Nest Aware on those pages, before you factory reset.
