Today I've started getting "Low device temperature" warnings from my nest doorbell battery. It's 27c outside so what's up with that????

Perhaps you could try contacting Support; it sounds like you may have a malfunctioning doorbell:
1. Go to https://support.google.com/googlenest/gethelp.
2. Select a category/product family, and type in a brief description of the issue, then click "Next".
3. Click "Other", then click "Next step".
4. Under "Resources", just click "Next step". (Clicking one of the listed links will bring up a Help page page.)
5. Under "Contact options", choose to get a phone call or chat with the team, depending on availability in your country.

Thanks.. Customer support sent me instruction on how to factory reset to fix this error 😞 I hate factory resetting things, something always seams to go wrong when doing that.

Did that solve your issue? My Nest camera started doing the same and I'm hesitating to factory reset because of the inconvenience and because I think it might be just an incorrect notification, but not the actual temperature of the device

I'm sorry to say that it didn't fix the problem and I'm kind of leaning towards it being a hardware problem with the temperature sensor in the doorbell. Everything else works fine with it except that I keep getting that low temperature warning but, It's not as if I paid any attention to the warning even when it is cold outside because I have it powered with the optional power adapter.
