Of the 2 outdoor camera/floodlights we have, one keeps going offline. Don’t know how to reset, whether this would help…? Where is the wifi info in the settings for the device?

Unless you have a poor Wi-Fi signal at that one floodlight camera, I don't think it should keep going offline, but there have been other customers reporting this issue with the floodlight camera. I don't know what Wi-Fi info you're looking for, but the Google Home app, unlike the Google Nest app for our older cameras, only shows what's found under "Device information", and this does not even include the Wi-Fi network name (SSID).
We have had a similar camera--the Google Nest Camera (Battery)--plugged in with the optional power cable for a year now, and it stays online all the time.
Perhaps you have a defective camera and should contact Google Nest Support for a replacement:
