I have signed up for the 30 day subscription in May and am not seeing it yet.

You should be able to check your subscription on the Subscription Management page:
https://store.google.com/subscriptions
If you click on your subscription, you can make sure it's for the same Google Nest "home/structure" as your camera.
You can also go to your camera in the Google Home app and go to Settings | Video | Video history and see which option is checked.
You also need to turn on recording for the types of events you want to record, under Settings | Events | Scene events, where you can also turn on notifications.
