I have the gen 2 Doorbell and for some reason it's stopped sending me notifications.
I don't get notifications when someone rings the doorbell and when people are seen.
I've checked my settings and the notifications are turned on.
How can I fix this issue without factory resisting the doorbell or removing the device from the home app?

And "Push notifications" is still enabled?

Ye its enabled.
I've just checked again I'm getting notification when someone rings the doorbell but not when someone is seen.

Under Settings | Notifications, do you by any chance have "Away-Only notifications" enabled?
If not, and if you have People and/or Motion notifications enabled, I don't know why you are NOT receiving notifications.
