I recently installed my second new Chromecast. I had no issues redeeming the Netflix offer with the first one, but I dont think I chose the option to receive an email to receive the Netflix offer with the second Chromecast installation.
How do I now claim it as I dont have the email for it?

Please try looking in the 'Feed' tab at the bottom of the Google Home app.
