If I reach the 60 days of my event history video will the previous video get deleted and then the 60 days are reset, or I will not get any event history video up until that point?

Once you hit 61 days, the history from day 1 is deleted. When you hit 62 days, the video from day 2 is deleted and so on. You always have the latest 60 days.
