I use Nest learning thermostats in short term rentals. What have you found to be the best most efficient and effective setting?

Hi Kurtj - I just bought a Nest Learning Thermostat for my vacation rental. Previously I had a smart Honeywell model, but it frequently disconnected from the WIFI. Finally, I decided to try Nest. So far, I'm not pleased and I'm hoping you have some tips for me! On the Honeywell, I loved the ease of setting the program, either at the home, on the website, or on my phone app. Also, I could "partially lock" the thermostat, allowing my guests to tap the temp up/down, but not change the program. So it would always revert to my program (67F at 6am/Noon/6pm/midnight when guests are there; 55F when they're not).
So far with the Nest, I can't even figure out how to read what's on the screen. There's no user manual. I haven't yet hunted down YouTube videos, but I'll certainly need to. I don't think I want it "learning" any pattern and taking it upon itself to adjust the temp, because every week is different, and I want to control the program always. I'm not sure how to turn off that "learning" feature.
Have you used the Nest for your vacation rentals yet? Can it accomplish a "partial lock?" What have you learned about using it? Thanks for any tips you can offer. - jackie
