Learning Thermostat 3rd Gen - set up in Curling Rink.

We have the 3rd Gen set up in a Curling rink . The Preset Temps are to high . we would like to know how to change so we can lower the Temperature. It's an Unique situation. The ice Temp is 23 degrees . We would like to be able to only Heat to 42 degree range. The safety feature allows us to lower the Temp but we can't shut it off so it does not buffer the Heat all Night. It's in a Cold environment so we are not worried about the Pipes freezing.
