Nest 3rd Gen Learning Thermostat conflict between learning and scheduled mode?

Is there a conflict between learning and scheduled mode - or am I being dim

I set a schedule for both heating and water

I set the thermostat in learning mode

It appears that the schedule overrides learning mode

E.G. in the schedule I set 12C  to start at 21:30

In learning mode - without me setting it - it went to 12C at 21:30

I have now deleted the schedule and reset learning mode I set it at 7am for 18C and will set 12C at 21:30 - let's see what happens

More complex, or perhaps simpler, than I thought

Deleted schedule,

Day 1 got up at 7 to set temp on app - learning mode on - did not appear in schedule

Set temp during day on stat - did not appear in schedule

Set for 12C at 9:30 in app - did not appear in schedule

Day 2 got up at 7 to set temp in app - learning mode still on - did not appear in schedule

Changes to temp on stat durning day did not appear in schedule

So - gave up and set them in schedule in the app - what's happening?
