I want to be able to turn off my heating at night when I choose and turn it on again in the morning when I choose. The thermostat keeps overriding my schedule and my decisions.

If you mean you want to control the Nest manually (in person or via the website or app), "Eco mode" should work. That's Nest's name for a permanent hold. In Settings, set Eco temp to your nighttime "off" temperature (i.e., something really low), set the regular schedule temperature(s) to whatever you want in the daytime, then each night/morning turn Eco mode on/off. Is that what you mean?
Or you can program a schedule with a very low nighttime temperature and higher daytime temperature(s).
