I don't want any smart control or scheduling with my temperature settings - I just want to set it to 76 and keep at that temperature. I will adjust it manually as I desire. How can I do that?

I've been struggling with this myself. Google does not allow you to fully control your thermostat - it knows best. I'm constantly trying to keep my thermostat set to minimize cost and reliance on the grid. Google keeps tweaking it to increase my load on the grid (and my cost). Best bet: Return your device and purchase a device (from a thermostat company - not a tech giant) that assures you of manual control.

You can effectively turn your Nest Thermostat into a standard thermostat by disabling its smart features.
With these steps, we deactivated the smart options on your thermostat. Only if you have a schedule can you influence the temperature on your thermostat.

After these steps, you can control your thermostat manually without any interference.

Point of clarification: The following steps are not sufficient to defeat the thermostat's auto-adjustment. These steps do reduce the instances of auto-adjustment, but they do not eliminate auto-adjustment:
To be specific, a thermostat with the above configurations will continue to tweak its temperature (and in doing so, display the "leaf" icon that appears when Eco temperatures are enabled).
