Hi there, I’ve been having trouble throughout my home, but specifically in my home office. Mesh test and speed tests both reflect everything working fine, but it’s at times really slow and sometimes faster to use no WiFi on my phone. The most pressing issue, however, is to connect my laptop to my “office” mesh point vs. the main mesh point. While they’re relatively close in proximity, we live in an old apartment building with very thick walls, so it would be great if I could connect to the mesh that is closer to the office. How can I make my laptop do that?

There is no way to do that I'm afraid. Devices themselves, like your laptop and phone, decide which of your Wifi points and which band to connect to, and also when to switch between the bands. Like most Wifi systems, Google Wifi and Nest Wifi use industry standard mechanisms (known as 802.11k and 802.11v) to help devices make these decisions.
The best thing you can do here is do things that improve signal quality in the area where your device is by looking at the layout of your Wifi points in general so they are positioned as much as possible as Google recommends to improve Wifi performance. One thing that's not explicitly stated is you should aim to place your primary Wifi point as close as possible to the centre of your home. That's because the Google Wifi and Nest Wifi mesh system uses a fewest hops approach. If one of your secondary points can get even a weak connection to your primary Wifi point, it will do that instead of going through an intermediary Wifi point that may physically be closer. That's why not installing them in a straight line, and placing your primary Wifi point close to the centre of your home really helps, along with all the other guidance in that article below.

I'd also recommend checking your laptop has the latest updates for it's operating system, and has the latest Wi-Fi driver (software) installed from your laptop manufacturer. You can easily find these updates on the laptop manufacturer's website, or you can contact them directly for further support. Outdated drivers are a common cause of performance issues like the one you're describing.
