Does the Google Nest WiFi Pro works in Israel?

You'll probably have no problems, but Israel is currently not on the list of supported countries:
Which matter mostly because of differences in Wi-Fi/ wireless signal regulations (signal strength and frequencies). Take this list for instance, which shows differences in 5ghz Wi-Fi:
Worst case the equipment you buy might not even be legal to use in Israel, see this for instance:
TLDR: Will likely work, will might not be strictly legal, and your milage may vary.

Thank you very much for the detailed response.
If I read the WiKi page correctly, it shows that Israel and the US are very similar in what is allowed to use Indoors. Meaning, in Israel everything is restricted to indoors, while in the US it is not, but besides that difference, the frequencies and the like are very similar (besides some specific UNI-4 channels.
As such, I am less concerned about the legal stuff, was more worried about general compatibility with devices and freqeuncy.
The best example is FM radio, in Israel they use 88.00-~108.00 while all values are valid 99.5, while in the US it is only negative or positive (can't remember).
