I appreciate @timyal for helping here. I understand the frustration of not being able to see the option to link your Apple Music account to your Google Home devices. Currently, Apple Music on a Google Nest speaker or display is available only in Australia, Canada, France, Germany, India, Japan, Mexico, South Korea, the United Kingdom, and the United States. As to when it will be available in other countries, I'm afraid we don't have news to share. We're working on bringing the experience to other countries in the future and we'll surely keep this Community page posted for updates.
