Heads up that I was just able to connect to the 6ghz channel with my device. Appears that the wifi card is an AX211 which does support 6E.

Think I just found the answer to this. We can close this out for now, no good way to determine whats going. Have not heard of different wifi cards in the same model very misleading if so.
