I've experienced similar trouble with my Nest mini speaker, just after I've upgraded the router to wifi-6.
In my case, the wifi channel difference between Nest mini and the new router was responsible for the trouble.
My Nest mini's regional setting is for North America, where 2.4GHz band wifi has channels 1~11, while my country's regulation offers additional channel #12 and #13, as in most other countries.
My old configuration was to attach the speaker to 5GHz band only, which Nest mini and the router share the same channel set, thus had no connect issues.
The new router however, being a wifi-6 router, uses 2.4GHz and 5GHz altogether within a single SSID. It seems that every time the router chooses channel 12~13 for 2.4G band that my North American Nest mini can't talk to, the connection is lost.
All I had to do was to setup frequency band preferences for Nest mini in the router's per device configuration - luckily it had this - to use 5GHz band only, and the problem is now gone.

I might add, that my languages I choose in the assistant are actually german and English but the Nest Mini is located in France atm.
