assistant language reverts to default (which is Japanese-not English)

nest mini (gen2) assistant language reverts to Japanese which is the default that is set under device technical information as the default.  I've been on 'chat' and folks there can't change that setting and don't know what to do except to tell me to reset to factory settings - not something I want to have to do every time I have a network 'disconnect' which is almost daily....help?!?!?

Thanks for bringing your concern to our attention and posting it in the community. I apologize for the inconvenience your Nest Mini may be causing. 

I understand that your Nest Mini speaker is switching the language to the default. No worries; let's work on it. 

To help us troubleshoot, please follow the next steps:

• Update Assistant language
  • Open the Google Home app .
  • Tap Settings    Google Assistant  Manage all Assistant settings.
  • Tap Languages  Choose languages for speaking to your Assistant  Select the current language set.
  • Choose the preferred language to use instead.
