I cannot change my old email account to my new email account. I keep getting a message saying contact the previous owner to take this camera off the account. I am the previous owner

Google Nest says you can change the email for a Nest Account, but you cannot change the email for a Google Account if it is a gmail account:
"If your account's email address ends in @gmail.com, you usually can't change it."

If that is the case, perhaps you need to remove each Google Nest account from the Google Nest app or Google Home app while logged onto your current Wi-Fi network using your current (old) Google Account, then do a factory reset, and then reinstall in the Google Nest app or Google Home app using your new Google Account
Perhaps Google Nest Support can weigh in on how to change one's email for Google Nest.
