I live in an apartment building and neighbors pass by my nest doorbell all the time and this is of no interest to me.
I want the doorbell to record and recognize faces and notify me ONLY if the door bell is rung, not if someone just passes by.
How can I set up the doorbell so that I don't record events without the doorbell being rung? This seems like it must be a pretty standard necessity for apartment dwellers.

I am afraid that the Nest Hello Doorbell and the Nest Doorbell (battery) are not made to do this. They are meant to alert you for many different things. You can still try to lower your sensitivity settings for these other alerts though.
Best regards,
Brad.

I have to say that is really disappointing and I'm puzzled why that functionality would not be possible. In this case the doorbell does me no good and I'll be disposing of it.
