Hey PierreCrescenzo,
At this point in time, the Ambient Mode settings for When to start are hidden normally. However, you are able to view and change those settings with third-party applications on the Google Play Store. While I cannot point out any individual apps, there are plenty of resources you can check out to find the right app for you.

I apologize about the late response, thank you for being patient! Were you able to find the answer to your question? If not, I'd be happy to help out! The Chromecast with Google TV's ambient mode lasts until you turn off the TV or the Chromecast device. You are able to change how fast the pictures change in the Google Home app, as well as how long it takes to activate in the Google TV settings.
