Over the years we've purchased several cameras and the like. They've been set up on three different personal accounts. How can I reset everything and start over on a single account?

To change accounts on Nest products, you need to factory reset the devices and set them up accordingly.
So that is a bit of work to do so.
Maybe inviting each other to the Nest/Home family is a workaround? 🙂

Before doing a factory reset, you'll need to remove the Google Nest devices you intend to move from the Google Nest app or the Google Home app, as appropriate, while logged on to the separate accounts. Then do a factory reset. Then reinstall them using the Google account you want to use going forward. The process would be similar to the moving process documented in the link below:

If you keep your existing accounts and invite each other to each other's Google Nest households, keep in mind you can't do things like "Visitor announcements" across accounts, and you'll need separate Nest Aware subscriptions.
