I am trying to link my Spotify account to my google home account but it keeps saying Something Went Wrong Please Try Again Later. I have confirmed the internet is the same on both devices, the email is the same for both accounts. I have cleared cache for both apps, I have restarted both the router and the phone.

Thanks for doing those steps, let's see what's going on.
A quick question: what country are you located in? Could you try uninstalling and reinstalling both Google Home and Spotify app? Also, try using a different phone to see if that works.
