@SalvoC If you want to use the Google Home app on your phone, you'll have to create a "Personal Routine" in order to use a time delay. When creating your routine, you'll find the delay under actions and it's called "Delay start". The "Household Routines" in the app don't seam to have this option.
To create a "Household routine" with a delay, you'll have to use the script editor at https://home.google.com/ and when you get to the page, select "Automations" on the left side. You would use the action pointed out by @stickyrice in your script to insert a delay.
More information on using the Google Home script editor can be found here. https://developers.home.google.com/codelabs/create-a-scripted-automation#1

Hi SalvoC,
Thank you for reaching out to the community. I understand you want to know if you can stop your routines in the Google Home app. I'm happy to assist you this time.
It seems that routines may not be stopped using the Google Home app. However, this article provides guidance on creating and managing routines in Google Home. (Create and manage Routines in Google Home)
Let me know if you have any other questions.
Regards,
Gabriela
