It sounds strange that the cooling mode in your thermostat isn't an option anymore. That could happen for multiple reasons. Don't worry though. we can get it back on track.
Did you perform a factory reset on your Nest thermostat? If so, the cooling mode might've disappeared because you didn't select the proper wires during setup. However, this only applies to the latest Nest thermostat, set up exclusively on the Google Home app.
The wire used for cooling in your home is the Y1 wire. It's worth checking its connection to ensure it's selected during thermostat setup. An improper connection could trick your thermostat into thinking you don't have a cooling system.
