Saying "Turn on the fan" turns on the Nest thermostat fan for the default 15 minutes. Saying "Turn on the fan for two hours" plays a weird fan sound (poor at air circulation). Saying "Set the fan timer for two hours" sets a timer called Fan. Other variations give a collection of various results, none that run the fan for two hours or however long you want.
Yes, yes, can do this on the app, but we have voice control.
Is there a voice command to run the fan on the Nest for two hours, or whatever, or to the last period, or indefinitely?

Thank you for reaching out and we're sorry for the delay.
Forced-air systems run the fan whenever they’re heating or cooling. If your forced air system has a separate fan wire in your Nest thermostat’s G connector, you can run the system fan when it’s not heating or cooling. If not, your fan will only run automatically when your system is heating or cooling.
If you have a system with a dedicated fan wire, you can manually turn on the fan with the app or your thermostat, or set a fan schedule. For example, you can set the fan to run all night and automatically turn off in the morning.

That is not answering the question. The question was how to run the fan by voice for more than the default time.
