We have had no issues for nearly three years, a few days ago our water was cold.
We have reset the thermostat, checked the wiring (no issues) and the only way we can get hot water is if we put the heatlink onto manual, when we do this the hot water tank works. The only problem with this is when we override our heating comes on too !
We have tried to find a nest engineer in our area but so far no luck

Thank you for all the information @Sammy17 . I am sorry to hear you are facing difficulties with your device and will do my best to assist you with it.
It's great to hear you are able to trigger it using the manual mode, to have some way to activate it.
Let us do a quick test to see how the Heat Link behaves using the Nest app.
1. Go to the Nest app and select the hot water control and go next to the Heat Link.
2. Tap on the cogwheel in the upper right corner to go into the hot water settings and toggle the first option there off. This will turn off the hot water schedule, you can enable it back after the test.
3. Boost the hot water for any amount of time and listen for a clicking noise.
4. Turn the boost off and listen for a clicking noise again.
