Manual mode override

I am trying to use my Learning Thermostat in a completely manual way. I only want the temperature setting changed manually.  I do not want the Learning Thermostat to change the temperature on its own.  I have disabled everything. I set the temp to 50 Fahrenheit when I leave for a few days or more but I will often check on it remotely and see that the temp has changed from 50 to 64. How can I prevent this from happening?

I wanted to make sure we didn't miss any steps. Could you provide a rundown of all the steps you've tried? Also, are you enrolled to an Energy saving feature such as Rush Hour or Nest Renew?
